Though the Bittermens team may not fully understand the allure of the pickleback, they recognize the importance of shrubs - vinegar-based refreshers, often combined with alcohol or allowed to ferment - in colonial times.
Thinking about the immigrant experience of the Lower East Side in the late 19th and early 20th centuries, the team was inspired by the classic Dr. Brown's Cel-Ray Soda, a celery-flavored soda that was hugely popular in the 1930s, earning it the nickname "Jewish Champagne." While the declared flavor is celery seed, the Bittermens team detected hints of ginger and apple as well.
Drawing on this history, Bittermens set out to create a product that combined the concepts of a brine, a shrub, and a classic soda, dedicating it to the Orchard Street neighborhood and the Lower East Side Tenement Museum. The resulting Orchard Street Celery Shrub Bitters are GMO-free, Kosher-Pareve (not for Passover use), and may contain potential allergens like celery.
